Hi Tom,
Steering: Try seperating the pitman arm from the steering box (use a
splitter available for rent at most auto parts stores) and removing the
column with the wheel still attached. If you don't want to do this unbolt the
steering box from the frame and with the floor boards (wood & metal) out of
the truck you should be able to make it fit through the hole (works on the
1/2 ton but I'm only guessing the method would work on the 3/4 ton too).

Body: Remove everything attaching the body and lift one end from underneath
with a floor jack and a block on a crossmember (channel). Put 2x4 or 2x6
across the frame with blocks attached to make up any difference between the
floor and the bottom of any bodywork. Let body down to rest on blocks and
repeat process at other end. Having left enough 2x4(or 6) sticking out of
either side several guys can lift the body up, walk it off the chassis (no
rear wheels makes this easier) and set it down on other blocks. This removes
the body with the least stress on the metal. It works on a 1/2 ton and there
are plenty of variations. The motor pool way would be to put a rope (or
lifting sling) from end to end and lift it by the roof with an overhead crane
of some type. I prefer the first method myself...less damage and more fun
drinking the beer you bribed your buddies with to help you.
