With a sychronized transmission, all this does on your truck is make the
clutch wear out faster.

Your shifting problem.

It sounds like you have a synchro worn-out. When you put it into 3rd while
stopped, you "align" (kinda-sorta) the sychro gear.

The only sure-fire cure is to overhaul the transmission.

This is most often caused by people who try to shift a synchronized
transmission without using the clutch. Which brings up an important subject;
using the clutch. You must use the clutch with a synchronized transmission
and double-clutching doesn't do anything, but wear out the clutch faster.

You should not use the clutch with a non-synchronized transmission after
starting. If you feel so inclined to use the clutch, then you must
double-clutch. If you are unfortunate enough to have to take a CDL road test
in a vehicle with a non-synchronized transmission, you must double clutch.
