I have the same concern. Whenever I see no alternative, I make sure to
securely chock a wheel, and carefully consider where the truck might
fall, what it'll land on, how far the chassis might bounce on the
suspension, and where it might roll, and I try to not be in any of
those places.

There are bottle jacks that can be remotely actuated with air
pressure. They cost more, but might be safer. There are also hydraulic
rams which connect to remote pumps through hoses. You might take a
look at www.mcmaster.com, and see if any of the more exotic jacks are
in your price range.
