Diesel driving characteristics? M1009 6.2l

I've found that my newly acquired (and first diesel) seems to have more
get-up if I back-off on the throttle, as opposed to pedal-to-the-metal. If
it were a carbureted gas engine, I'd say it was lean. I haven't noticed any
smoke from tailpipe. Is this a normal trait of diesels? or is my pump
putting out too much fuel? Is the pump adjustable, or do I just have to
learn to feather the gas? On some days I seem to get 25mpg, some days not so
good, 17-20.
