I love the sound of it too!
The thermostat was tested a year ago and begun to open at about 180 and was
fully open at about 195.
The main point of the post was to show that a highly acurate digital
thermometer will show changes that would be very hard to see on the dash
gauge.
Downhill driving with the foot off the accelerator pedal will definitely
cool the engine. No fuel is burned and only heat from compressing air will
heat it and the fan is running at full speed.
Driving up and down in hilly country simply will not let the engine reach
its operating temp. My truck was loaded with two multifuel engines on the
bed and with the crane it weighed in at about 19,000 lb.

A thermostat with a higher temp range wouldn't have any effect if the
temperature never gets that high in the first place. When your engine is
idleing, it burns very little fuel and will not get hot. My engine can idle
for an hour and never even reach 170 degrees. And that's in the summer time.

Now if the thermostat was stuck open...
