Thermostats are definitely important to maximize heat transfer from the
engine to the radiator and also to stabilize the temp in the engine block=

when running. You do want the engine block to come to a fairly consisten=
t
temp after running for a while otherwise the oil may not get hot enough t=
o
get rid of the lighter hydrocarbons blown by the pistons and also the wat=
er
vapor that is a result of combustion. Also a cold block will tend to nee=
d
more fuel due to gas vapor falling out before reaching the combustion
chamber... the list keeps growing. Thermostats are definitely a good ide=
a.

As for your car, check your timing, late timing at high speeds will induc=
e
additional engine heating, check your radiator, and check to make sure th=
at
your thermostat is opening all of the way.
