Your problem sounds like:
1.loose waterpump drive belt
2.thermostat not opening all the way
3.restricted radiator, or waterjackets in the engine
4.possible waterpump impeller problem
To answer your question: Vehicles are designed, tested & built with
thermostats. If it overheats, there's a problem. removing the thermostat is a
band-aid fix at best. At worst it could still leave you sitting on a hot day,
miles from home....
